Onion bulb scale color arises from vacuolar flavonoid pigments. Pink to red cultivars accumulate anthocyanins, especially cyanidin derivatives, in epidermal cells. Carotene gives orange, xanthophyll yellow, lycopene red in tomato. Hence onion pink reflects anthocyanin deposition, not other pigments.
